Peach Summer Salad

Ingredients
  

  • 6-8 handfuls Spinach salad mix
  • 2 Peaches (peeled and sliced)
  • 1 Avocado (sliced)
  • 1/4 Small red onion
  • 1/2 Cup Feta cheese
  • 1/2 Cup Honey roasted peacan pieces
  • 3 Tbsp O' So Good Olive Oil Basil infused or Regular
  • 6 Tbsp O' So Good Peach Balsamic
  • 1/2 Tsp Dijon mustard
  • 1/2 Tsp Honey
  • 1 Pinch Salt (to taste)

Instructions
 

  • In a large salad bowl add the spinach mix. Next remove the fuzz on the peaches and thinly slice.
  • Next slice the avocado and the red onion about a 1/4 inch thick.
  • Then layer the peaches, red onion, avocado, feta cheese crumbles, and honey roasted pecans on top of the spinach mix.
  • To make the dressing add the olive oil, balsamic vinegar, dijon mustar, honey, and pinch of salt to a jar with a lid and shake until well combined. Drizzle the dressing over the salad and serve immediately or store in the fridge until needed.
