2Slicesthin cut chicken breast or cut a regular large chicken breast in half
1/2cupwhite onion chopped
1/4cupO’ So Good Olive Oil
1/4cupchopped yellow pepper
1tablespoonwater
2cuphalved cherry or grape tomatoes
1tablespoonO’ So Good Balsamic Vinegar
4cupromaine lettuce chopped
2oz.drained capers (optional)
1/3cupwhite italian shredded cheese or mozzarella
Instructions
Put 2 tablespoons of O’ So Good Olive Oil in a skillet along with the chopped white onions and chopped yellow pepper. Cook until the chicken is white throughout and the onions and peppers are soft. If necessary add a little bit of water to the pan while cooking so it doesn’t burn.
When the chicken is cooked, remove from the pan and set aside. Using the remaining juices in the pan cook the tomatoes until slightly blistered and soft. Remove from the pan and put with the chicken.
Prepare the rest of the salad by chopping the romaine lettuce and adding the capers if desired. Slice the chicken into cubes and place on top of salad with the tomatoes, yellow peppers, and cheese.
Drizzle the remaining juices in the pan (if any) along with remaining olive oil and O’ So Good Balsamic vinegar. Enjoy!
