O' So Good Salad

Savory salad with a light lemon oil and vinegar dressing.

Ingredients
  

  • 2 Heads of romaine lettuce chopped
  • 1.5 Cups Chopped tomatoes (about 4 roma tomatoes)
  • 1 Cup Shredded Swiss or Italian cheese
  • 1 4 oz Bag of slivered almonds
  • 1 Cup Shredded parmesan cheese
  • 8 Strips of bacon fully cooked and chopped
  • 2 2.5 oz Cans of sliced olives
  • 1/4 Cup Olive Oil (Basil or Garlic infused)
  • 2 Tbsp Lemon balsamic
  • 1 Lemon zested and juiced
  • 1/2 Tsp Salt
  • 1/4 Tsp Ground black pepper

Instructions
 

  • In a jar add the olive oil, balsamic vinegar, lemon juice and zest, salt and pepper and shake to combine. After well mixed put into the refrigerator to chill while you make the salad.
  • In a large bowl combine the lettuce, tomatoes, cheeses, almonds, chopped bacon bits, and olives. Mix until all ingredients are evenly distributed. Take the dressing out of the refrigerator and shake again. Then drizzle over the salad and mix. Top wiht croutons and enjoy!
