1lbChicken thighs (deboned, skin on) or breasts*Note: Chicken breasts will not get a crispy char like skin on thighs will.
1TbspPersian Lime Olive Oil
3 ClovesGarlic minced
2TbspsHoney
1.5 Tbsps Soy sauce
2TbspsLime juice
3DashesCayenne pepper powdered
1Big pinch salt (about a 1/4-1/2 tsp)
1/4CupParsley chopped
1LimeSliced in wedges
Instructions
Preheat the oven to 400 degrees F. Rub the minced garlic and lime olive oil on the chicken thighs. Add honey, soy sauce, lime juice, cayenne pepper, and salt to the chicken. Stir until all pieces of chicken are well coated.
Line a baking sheet with aluminum foil, place the chicken on it, and cover with aluminum foil to prevent burning. Bake the chicken for 20 minutes or until a meat thermometer reads 165 degrees internally.
Check periodically and if the sauce is pooling beneath the chicken use a spoon or a brush to put it back on the chicken. After about 20 minutes broil the chicken for 1-2 minutes or until the skin has a nice char to it. Remove from heat and garnish with parsley. Serve with lime wedges and a side of cilantro lime rice!
