Bacon Balsamic Jalapeno Poppers

Bacon wrapped delicious jalapeno poppers.

Ingredients
  

  • 10 Jalapeno Peppers
  • 2-16 oz Wide stripped bacon You will need two packages of bacon.
  • 8 oz Cream cheese
  • 1 cup Cheddar cheese (shredded)
  • 1/2 tsp Slap Ya Mama seasoning
  • 1/2 tsp Onion powder
  • 2 tbs Jalapeno Lime balsamic vinegar (divided)

Instructions
 

  • Preheat oven to 385 degrees fahrenheit and line a baking sheet with aluminum foil and place a wire rack on top of the foil.
  • Cook one of the packages of bacon and once cooled chop in to small pieces.
  • Take out the cream cheese so that is can soften while you prepare the jalapenos.
    Rinse and dry the jalapenos and make a cut down the center. Don't go all the way through. If needed make a sideways cut near the top to help open up the pepper so its easier to remove all the seeds. Using a spoon scrap all the seeds and membranes out leaving the jalapeno hollow.
  • In a bowl add cream cheese, chopped cooked bacon, cheddar cheese, slap ya mama and onion powder, and 1 tablespoon of jalapeno lime balsamic vinegar. Mix well until all combined.
  • Spoon cream cheese mixture into each of the jalapeno peppers until gone. Next, wrap each pepper in bacon using 1 to 1 1/2 strips. I cut some in half and used it the half to cover the jalapeno completely.
  • Place bacon wrapped jalapeno peppers onto wire rack and then bake in the oven for 30-35 minutes. Take them out and brush them with remaining balsamic vinegar and flip so that the top is on the bottom to ensure thorough cooking.
    Bake for an additional 10-15 minutes or until bacon is fully cooked.
