2-16oz Wide stripped bacon You will need two packages of bacon.
8 oz Cream cheese
1 cupCheddar cheese (shredded)
1/2tspSlap Ya Mama seasoning
1/2tsp Onion powder
2tbsJalapeno Lime balsamic vinegar (divided)
Instructions
Preheat oven to 385 degrees fahrenheit and line a baking sheet with aluminum foil and place a wire rack on top of the foil.
Cook one of the packages of bacon and once cooled chop in to small pieces.
Take out the cream cheese so that is can soften while you prepare the jalapenos.Rinse and dry the jalapenos and make a cut down the center. Don't go all the way through. If needed make a sideways cut near the top to help open up the pepper so its easier to remove all the seeds. Using a spoon scrap all the seeds and membranes out leaving the jalapeno hollow.
In a bowl add cream cheese, chopped cooked bacon, cheddar cheese, slap ya mama and onion powder, and 1 tablespoon of jalapeno lime balsamic vinegar. Mix well until all combined.
Spoon cream cheese mixture into each of the jalapeno peppers until gone. Next, wrap each pepper in bacon using 1 to 1 1/2 strips. I cut some in half and used it the half to cover the jalapeno completely.
Place bacon wrapped jalapeno peppers onto wire rack and then bake in the oven for 30-35 minutes. Take them out and brush them with remaining balsamic vinegar and flip so that the top is on the bottom to ensure thorough cooking. Bake for an additional 10-15 minutes or until bacon is fully cooked.
