Olive Oil’s Lemon Garlic Chicken Salad

Put 2 tablespoons of O’ So Good Olive Oil in a skillet along with the chopped white onions and chopped yellow pepper.

Ingredients
  

  • 2 Slices thin cut chicken breast or cut a regular large chicken breast in half
  • 1/2 cup white onion chopped
  • 1/4 cup O’ So Good Olive Oil
  • 1/4 cup chopped yellow pepper
  • 1 tablespoon water
  • 2 cup halved cherry or grape tomatoes
  • 1 tablespoon O’ So Good Balsamic Vinegar
  • 4 cup romaine lettuce chopped
  • 2 oz. drained capers (optional)
  • 1/3 cup white italian shredded cheese or mozzarella

Instructions
 

  • Put 2 tablespoons of O’ So Good Olive Oil in a skillet along with the chopped white onions and chopped yellow pepper. Cook until the chicken is white throughout and the onions and peppers are soft. If necessary add a little bit of water to the pan while cooking so it doesn’t burn.
  • When the chicken is cooked, remove from the pan and set aside. Using the remaining juices in the pan cook the tomatoes until slightly blistered and soft. Remove from the pan and put with the chicken.
  • Prepare the rest of the salad by chopping the romaine lettuce and adding the capers if desired. Slice the chicken into cubes and place on top of salad with the tomatoes, yellow peppers, and cheese.
  • Drizzle the remaining juices in the pan (if any) along with remaining olive oil and O’ So Good Balsamic vinegar. Enjoy!
