
Jalapeno Cilantro Lime Marinated Chicken

Ingredients
- 1 Small/ medium jalpeno
- 1 bunch Cilantro leaves (minus the stems)
- 1 tsp Ground cumin
- 1 tsp Salt
- 1 Lime juiced
- 1 Garlic clove minced
- 2 tbsp Garlic olive oil
- 2 tbsp Jalpeno lime balsamic vinegar
- 1/2 cup water
- 4 boneless skinless chicken breasts
Instructions
- Place all the ingredients except for the chicken breasts into a blender and pulse until you get a pesto like consistency. You should have a little over 1 cup. Reserve 1/2 a cup for later.
- Butterfly your chicken breasts and place in a bowl. Pour the other 1/2 cup of the cilantro mixture over the chicken and toss to fully coat each one. Cover and place the chicken breast in the refrigerator to marinate for at least 1 hour.
- After the chicken is done marinating cook them in a skillet until the temperature reaches 165 degrees with a meat thermometer. You may have to do this in sections. Once the chicken is done cooking use the reserved cilantro sauce to drizzle over the chicken. Serve with rice or other desired side and enjoy!
