Olive Oil’s Caprese Chicken
Sprinkle the sliced basil leaves on top of the tomato and drizzle with O’ So Good Balsamic Vinegar as well as the remaining juices from the pan.

Ingredients
- 2 tablespoons O’ So Good Olive Oil
- A few shakes salt
- A few shakes pepper
- 1 big tomato sliced into 6 pieces
- 6 boneless skinless chicken breasts
- 1 tablespoon Water
- 1/2 cup O’ So Good Balsamic Vinegar
- 10 fresh basil leaves
- Mozzarella cheese sliced into 6 pieces
Instructions
- Preheat the oven to 400 degrees F. Drizzle 1 tablespoon of O’ So Good Olive Oil onto the baking sheet making sure it is evenly coated.
- Add a few shakes of salt and pepper all over the pan. Arrange the chicken in the center of the baking sheet and drizzle chicken with remaining O’ So Good olive oil and 1 tablespoon water. Bake until the chicken is cooked through about 20 to 25 minutes.
- Remove the pan from the oven and drape a slice of mozzarella cheese over each piece of chicken and then a slice of tomato on top. Put the sheet back into the oven and bake until the cheese melts about 5 minutes.
- Sprinkle the sliced basil leaves on top of the tomato and drizzle with O’ So Good Balsamic Vinegar as well as the remaining juices from the pan. Serve with salad and bread-Enjoy!
